Thai Beef Salad

Ingredients
1 kg rump steak
2 cloves of garlic
Small piece of grated ginger
2 tablespoons soy sauce
2 tablespoons fresh lime or lemon juice
1 tablespoon of fish sauce
1 tablespoon of brown sugar
1 red onion, thinly sliced
2 red chillies finely sliced
1 punnet cherry tomatoes, halved or quartered
1 cup bean shoots
Method
Fry or barbecue beef on high heat until medium rare. Allow to rest and cool.
Mix garlic, ginger, soy sauce, lime juice, fish sauce, sugar and chillies in a blender or food processor until smooth. This makes a traditional blended spicy sauce. Coriander optional.
Slice the beef as thinly as possible and cut into strips. Place in a bowl. Pour the dressing over the meat.
Toss the mint leaves, finely sliced chillies, bean shoots, tomatoes and the red onion and mix into the meat.
Place onto a serving dish and serve with a drizzling of lime.
