


Lemon Margarita
A prefect blend of sweet and bitter flavours this lemony twist on a classic Margarita is perfect for any hosting occasion.

Lemon Margarita

Ingredients
1/3 cup Tequila
1/2 cup Cointreau
8 mini meringues
1 lemon wedge
2/3 cup lemon juice
1/3 cup sugar syrup
2 tbsp finely grated lemon rind
2/3 cup crushed ice
Lemon twist, to serve
Directions
- Add salt, lemon zest and half the meringues in a mortar and pestle. Pound until crushed. Transfer to a plate.
- Rub the lemon wedge around the rim of the serving glasses. Dip into meringue mixture to coat the rim.
- Making two cocktails at a time, add half the lemon juice, half the sugar syrup, half the Cointreau, half the tequila and half the ice into a cocktail shaker. Cover, and shake until combined. Pour into two of the prepared glasses.
- Repeat step 3 with the remaining lemon juice, sugar syrup, Cointreau, tequila and ice.
- Top each drink with the remaining meringues. Serve immediately.
