Aestone Land Cask is a rich and smoky tasting whisky matured for more than 10 years in aging cellars that are further inland from the sea. The "LAND" champions the use of highland peat and is therefore rich and smoky in character. There's a lot to like here. Aromas of rich and punchy peat with layers of coal tar and damp bonfire smoke - punctuated with vibrant, zesty citrus notes that flow onto a palate with an initial rush of peat and wood smoke followed by a gentle sweetness with hints of spice and ripe fruits enveloped in smoke. Benriach Smoky Ten Single Malt Scotch Whisky 700mL Bottle, $125.00

In the early 1970s, Benriach broke convention in Speyside by returning to distilling batches of whisky in the old, 19th century style, using malted barley smoked with Highland peat. This wood rich Highland peat imparts distinctly sweet and smoky notes into Benriach peated whiskies. Benriach The Smoky Ten has been crafted from a combination of unpeated and peated spirit and three cask matured for at least ten years in a combination of bourbon barrels, Jamaican rum casks and toasted virgin oak. Cragganmore 12 Year Old Speyside Single Malt Scotch Whisky 700mL Bottle, $130.00

A small distillery in the largest and most famous whisky region of all in the Scottish Highlands, Cragganmore is derived from Great Rock in Gaelic. Cragganmore Distillery was founded in 1869 by John Smith, who is said to have been the most experienced distiller of his day. Before, he had been manager of Macallan, Glenlivet and leaseholder of Glenfarclas Distillery. One of the most famous and influential Scotch Whisky authors (the late Michael Jackson) described Cragganmore as having the most complex aromas of any malt. John Smith designed Cragganmore distillery around unique flat-topped stills to deliver complex flavours. It is a true designer malt. This single malt as awarded a Gold Medal at the Scotch Whisky Masters 2010, 2011. Each bottle has sweet floral notes with hints of wood smoke, riverside herbs, vanilla and cereals. Fuji whiskey was born out of a joint venture in 1972 between Kirin Brewery, Chivas brothers and Seagram and Sons. Master Distiller Jota Tanaka has 30 years of distilling experience in the US and Japan and is only the second Master Blender in the distillery’s history. The water in this whiskey comes from snowmelt run-off from nearby Mount Fuji, which takes about 50 years to cycle.
